How to

Marinate the chicken

  1. In a bowl, combine grated garlic, lemon zest, lemon juice, olive oil, and PitmasterX Gyros rub. Mix well.
  2. Add chicken thighs to the marinade, coating them evenly. Cover with aluminum foil and refrigerate overnight.

Roast the Chicken:

  1. Preheat barbecue for indirect heat at 160°C or 320°F.
  2. Place marinated chicken thighs on the grill. Roast until lightly browned, basting with olive oil.
  3. Once chicken reaches internal temperature of 75°C or 165°F, remove from grill and let rest.
  4. Slice chicken into small pieces.
  5. Fill each pita bread with sliced chicken and top with tzatziki sauce
