3 cloves garlic
zest of 2 lemons
juice of 1 lemon
2 tbsp olive oil

How to
Marinate the chicken
- In a bowl, combine grated garlic, lemon zest, lemon juice, olive oil, and PitmasterX Gyros rub. Mix well.
- Add chicken thighs to the marinade, coating them evenly. Cover with aluminum foil and refrigerate overnight.
Roast the Chicken:
- Preheat barbecue for indirect heat at 160°C or 320°F.
- Place marinated chicken thighs on the grill. Roast until lightly browned, basting with olive oil.
- Once chicken reaches internal temperature of 75°C or 165°F, remove from grill and let rest.
- Slice chicken into small pieces.
- Fill each pita bread with sliced chicken and top with tzatziki sauce.
