How to

  1. First, prepare your BBQ for smoking at 180°C / 350°F. While the grill heats, start assembling your lollipops. Slice each bratwurst into 2-inch pieces and wrap them tightly with bacon, securing them with a skewer.
  2. Place the skewers on a block of smoke wood positioned on the grill. This block will not only hold the lollipops but also enhance their smoky flavor as it burns slowly.
  3. Next, mix butter, sriracha hot sauce, and brown sugar in a saucepan over medium heat, stirring until the sugar dissolves and the sauce becomes smooth.
  4. Generously brush the bratwurst lollipops with the sauce, then roll them in flavored sesame seeds for an extra layer of taste and texture.
  5. Smoke the lollipops for about 20 minutes or until the bacon is crispy and the bratwurst is cooked through. Serve hot off the grill, and watch them disappear!
