How to

  1. Create the Pitmasterx's Fresh Spicemix according to it's recipe.
  2. Season your T-bone steak with the spice mix on all sides and let it marinade for 30 minutes .
  3. Fire up your grill and set it for an indirect temperature of 120°C or 250°F.
  4. Place your steak on the grate and stick in a thermometer to keep track on the core temperature.
  5. Close the lit and let the steak smoke until you reach a core temperature of 50°C or 120°F.
  6. Meanwhile, work your way trough the Beef Jerky Butter recipe.
  7. Once your T-bone has reached the desired core temperature it's time to take off the steak and let it rest for 20 minutes.
  8. Meanwhile heat up a cast iron pan on your BBQ.
  9. Add 1 tbsp of olive oil to the pan and start searing your steak on both sides.
  10. After 60 seconds on both sides with a very high temperature, your steak is has the perfect crust and is ready to be served.
  11. Slice the steak in to thin strips and put 2 tbsp of beef jerky butter on top and let it melt over of the steak.
