Tennessee Honey Ribs

Ingredients
 

Honey Whiskey Sauce

  • 250 grams butter
  • 100 grams brown sugar
  • 5 tbsp honey
  • 1 tbsp mustard
  • 1 tbsp chili flakes
  • 1 cinnamon stick
  • 100 ml Jack Daniels Tennessee honey bourbon

Instructions
 

  • carve into the membrane in 2 directions with a sharp knife to let the smoke penetrate but keeping the crunchy texture during the cook.
  • Put on a thin coating of mustard. This will help the rub stick.
  • Season with my homemade PitmasterX’s Classic BBQ rub.
  • Fire up your BBQ and put in 1 chunk of smokewood in the center and one on the side for later.
  • Set it for indirect heat. I'm using the kamado joe heat deflectors to archieve this.
  • Put the grill grates back in. Place the ribs on the grates and let it smoke with the top vent open to the second stripe and the bottom vent almost closed.
  • Let it smoke at a temperature of 120°C/250°F.
  • Smoke untill they reach a temperature of 70°C/150°F
  • Wrap the ribs along with the honey whiskey sauce ( recipe below ).
  • Let it continue to smoke for another hour at the same BBQ temperature.
  • Unwrap the ribs and take out the heat deflectors of the grill.
  • Place the ribs back on the grill and brush with the sauce.
  • Let it sit for a couple of minutes with a closed lit.
  • You BBQ Ribs are done and ready to be eaten.

Honey Whiskey Sauce

  • Heat up a pan with 250 grams of butter along with 100 grams of sugar and let it safely melt.
  • Add some mustard, chili flakes, cinnamon stick and 100 ml of bourbon and let the sauce come up to a syrupy bubble.
