Ingredients
600 grams / 1.3 oz lamb liver
500 ml / 2 cups milk
15 grams / 0.5 oz rosemary
15 grams / 0.5 oz thyme
1 tbsp finishing salt
½ tbsp black pepper
1 tsp olive oil
200 grams / 0.5 lbs sliced young gouda cheese
200 grams / 0.5 lbs bacon strips
Seasoning
3 tbsp parsley
1 tbsp thyme
1 tbsp rosemary
2 sun dried tomatoes
1 tbsp finishing salt
Saute Onion & Garlic
90 grams / 3 oz butter
2 white onions
4 garlic cloves
½ tbsp finishing salt
½ tbsp black pepper

How to
- Take the whole liver and placing it in a deep aluminum oven tray or a suitable container for submersion.
- Pour milk into the tray until the liver is fully submerged.
- Bruise the thyme and rosemary delicately and sprinkle a pinch of salt and ground pepper.
- Cover it up and allow the liver to brine in the milk for 2 hours.
- Take the liver out and pat the liver dry with paper towels.
- Slice the liver into long strips.
- To create the seasoning, utilize a blender to merge all the components of the seasoning mixcombine all the ingredients for the seasoning mix. Blending them thoroughly until they are l well incorporated.
- Season the liver strips with the seasoning mix. If needed, the tomatoes can help the mixture stick together, or you can add a teaspoon of olive oil.
- Heat a pan on your Napoleon Prestige 500.
- Add butter to the pan and let it melt.
- Sauté the chopped onions and garlic cloves in the melted butter.
- Season the mixture with salt and pepper to taste.
- Spread some of the sauteed onions and garlic on top of the liver strips.
- Place a narrow strip of young gouda cheese on each liver strip.
- Carefully wrap two-thirds of a bacon strip around each liver strip.
- Set your barbecue up at low heat
- To prevent sticking, apply a light layer of oil onto the grill surface.
- Grill the liver rolls with the lid closed, flipping them after 10 minutes.
- Afterwards spread barbecue sauce over the liver rolls and allow them to cook for an additional 2 minutes on the barbecue. And voila! They're ready to enjoy!
