The Fish Basket Fatty is a fun and viral-style BBQ snack that’s incredibly simple but packed with flavor. Seasoned minced meat is pressed into a fish grilling basket and grilled until crispy on the outside while staying juicy inside. With fresh herbs, scallions, and bold BBQ seasoning, this is the kind of crunchy, smoky backyard snack that’s perfect for sharing straight off the grill.

Ingredients

Meat Mixture

  • 1 kg / 2.2 lb ground meat (beef or beef-pork mix)

  • 3 scallions, finely chopped

  • 1 handful fresh parsley, finely chopped

  • 5 tbsp BBQ seasoning

For Grilling

  • 1 tbsp / 15 ml olive oil or melted butter

  • Fish grilling basket

How to

  1. Preheat your BBQ for indirect grilling at around 180°C / 356°F.
  2. In a large bowl combine the ground meat, chopped scallions, chopped parsley, and BBQ seasoning, then mix thoroughly by hand until the mixture becomes sticky and well combined.
  3. Lightly grease a fish grilling basket with olive oil or melted butter and press the seasoned meat mixture evenly inside the basket, forming a flat layer that fills the basket completely.
  4. Close the fish basket and place it directly on the grill grates.
  5. Grill the fatty for about 20–25 minutes, flipping the basket halfway through so both sides cook evenly.
  6. Continue grilling until the outside is crispy and the internal temperature reaches 72°C / 162°F.
  7. Carefully open the basket, slice the meat into portions, and serve immediately while hot and juicy
