Tortilla Kebab

This Tortilla Kebab is a viral BBQ street-food style recipe inspired by traditional lavash kebabs. Instead of flatbread, tortillas are filled with a flavorful minced meat mixture, grilled until crispy on the outside and juicy inside. Served with a fresh yogurt garlic sauce, this crunchy, cheesy BBQ snack delivers the perfect balance of texture, flavor, and smoky grill character.

  • 6–8 large flour tortillas

Yogurt Garlic Sauce

  • 200 g / 7 oz Greek yogurt

  • Juice of ½ lemon

  • 2 garlic cloves, finely grated

  • 50 g / 1.7 oz cucumber, finely grated

  • 1 tbsp / 15 ml olive oil

  • 1 tsp Gyros seasoning

How to

  1. Finely dice the onion and bell pepper and place them in a bowl with the minced beef. Add the gyros seasoning, beef seasoning, and shredded cheddar cheese, then mix everything by hand until it forms a smooth and slightly sticky meat mixture. If the meat feels too dry, add a few tablespoons of lukewarm water to create a paste-like texture that spreads easily.
  2. Lay the tortillas flat on a cutting board and trim them into squares if needed. Spread a thin, even layer of the meat mixture over each tortilla, pressing it firmly into the surface so it sticks well.
  3. Preheat your BBQ for direct cooking at 180°C / 356°F.
  4. Place the tortilla squares onto skewers, threading them through the center so they stay flat and secure. Lightly grease the grill grates or brush the tortillas with a little melted butter to prevent sticking. Grill the skewers on the BBQ, turning occasionally so both sides cook evenly and the tortillas become crispy and golden. Continue grilling until the meat is fully cooked and reaches an internal temperature of at least 72°C / 162°F.
  5. While the kebabs cook, prepare the sauce by mixing Greek yogurt, lemon juice, grated garlic, grated cucumber, olive oil, and BBQ seasoning in a bowl until smooth and fresh tasting.
  6. Remove the tortilla kebabs from the grill, slice them into strips or halves, and serve immediately with the yogurt garlic sauce on the side.
