Ingredients

  • 250 g / 9 oz bacon (slices)

  • 1 medium onion, finely chopped

  • 1 tbsp Worcestershire sauce

  • 2 tbsp maple syrup

  • 2 tbsp bourbon

  • 1 tsp PitmasterX Classic seasoning
  • 100 ml / 3.4 fl oz beer

How to

  1. Place the bacon slices in a PitmasterX hand polished 12" cast iron skillet and let them cook gently over medium heat.
  2. Once the bacon starts to brown, pour the beer over it and let it simmer. Cook until all the moisture has evaporated and the bacon is golden and crispy.
  3. Remove the bacon from the pan and finely chop it. Set aside.
  4. In the same skillet, add the chopped onion and sauté until soft and translucent.
  5. Add the PitmasterX Classic seasoning, Worcestershire sauce, maple syrup, and bourbon. Stir and let the mixture simmer gently for 5 minutes to reduce and combine the flavors.
  6. Add the chopped bacon back to the pan. Stir to coat everything in the sticky, sweet, and savory sauce.
  7. Let it cook for another few minutes until it reaches a jam-like consistency.
    Transfer the bacon jam to a clean jar. Let it cool, then seal and store it in the refrigerator.
