Twice-Fried Belgian Fries

These classic Belgian-style fries are golden, crispy, and full of flavor. Fried in traditional beef tallow (ossewit) and seasoned with PitmasterX Classic seasoning, they’re the perfect snack or side dish. Serve them with a generous dollop of creamy Dutch mayonnaise for the ultimate fry experience.

How to

  1. Peel and cut the potatoes into thin fries, around 8 mm / ⅓ inch thick. 
  2. Rinse the fries under cold water to remove excess starch. 
  3. Dry them thoroughly using a clean kitchen towel.
  4. Fire up the side burner of your BBQ and place your PitmasterX skillet on top. Add the beef tallow and let it melt completely.
  5. Heat the fat to 130°C / 266°F, then fry the fries in batches for 10 minutes until soft but not yet colored.
  6. Remove the fries and let them cool completely on a tray or paper towels.
  7. Increase the tallow temperature to 180°C / 356°F.
  8. Fry the cooled fries again in batches for 5 minutes until golden brown and crispy.
  9. Drain on paper towels, season immediately with PitmasterX Classic seasoning, and serve with a generous spoon of mayonnaise.
