For the rolls

  • 6 chipolata sausages

  • 6 soft white hot dog buns

  • 6 slices cheddar cheese

  • 1 onion

  • 50 g / 1.8 oz pickled jalapeños (optional)

  • 50 g / 1.8 oz fried onions

How to

  1. Preheat your BBQ and grill the chipolata sausages until fully cooked and golden brown.
  2. While the sausages are grilling, slice each hot dog bun lengthwise without cutting all the way through.
  3. Place a slice of cheddar cheese inside each bun and place them on the BBQ (indirect heat works best) just until the cheese is melted.
  4. In the meantime, prepare the sauce by combining ketchup, mayonnaise, mustard, PitmasterX classic seasoning, and white vinegar in a squeeze bottle—shake well until fully mixed.
  5. Once the cheese has melted, place a grilled sausage in each bun.
  6. Top with raw sliced onion, crispy fried onions, and if you like a spicy or tangy kick, add pickled jalapeños or pickles.
  7. Finish with a generous drizzle of the homemade sauce and serve immediately.
