Quesadilla
400 g / 14 oz ground beef
100 g / 3.5 oz onion
100 g / 3.5 oz red bell pepper
15 g / 0.5 oz fresh coriander
2 cloves garlic
30 g / 1 oz chipotle pepper sauce
1 tbsp olive oil

6 taco shells
100 g / 3.5 oz cheddar cheese
Ranch Dip
1 packet ranch seasoning mix
100 g / 3.5 oz mayonnaise
100 g / 3.5 oz sour cream or crème fraîche
- 1 tbsp PitmasterX Texas Beef seasoning
20 g / 3/4 oz fresh dill
20 g / 3/4 oz fresh parsley

How to
- Fire up your BBQ and place a plancha on medium heat.
- Drizzle a bit of olive oil on the plancha and sauté the chopped onion, red bell pepper, and minced garlic until softened.
- Add the ground beef and cook while breaking it up with a spatula.
- Once browned, mix in the chipotle pepper sauce, chopped coriander, and PitmasterX Texas Beef seasoning.
- Let it all simmer on the plancha until well combined and fragrant.
- Warm the taco shells briefly on the plancha or grill grates, then fill them with the beef mixture and top with grated cheddar cheese.
- Allow the cheese to melt, then fold the tacos in half and give them a quick toast on each side if desired.
