How to
- Begin by preheating your Kamado Joe or any barbecue to 140°C or 284°F.
- While it heats, season your chicken drumsticks liberally with PitmasterX Tweety seasoning.
- Place a chunk of beechwood into the charcoal to start the smoke, then set up your heat deflectors and grill grates.
- Arrange the drumsticks on a tray with a rack to allow for airflow and smoke engulfment. Smoke the chicken for about 30 minutes, or until a smoky crust forms.
- Once done, transform the drumsticks into lollipops by cleaning the lower bone, making handling and eating easier.
- Next, prepare the spicy butter bath. In three jars, divide the butter, adding a tablespoon of chili oil and a tablespoon of tomato paste to each. Sprinkle a teaspoon of Texas seasoning into the jars. Place the jars on the barbecue at 180°C or 356°F and let the butter melt for about 10 minutes.
- After the butter has melted, submerge the smoked drumsticks in the jars, making sure they're well coated with the spicy, flavored butter. Close the barbecue lid and continue cooking for an additional 15 minutes or until the chicken reaches an internal temperature of 75°C or 167°F.
- To serve, swirl the chicken in the jar to pick up more of the delicious, spicy butter mixture, then plate. The result is a visually impressive and incredibly flavorful dish that's both a taste and textural sensation. Enjoy this unique twist on a barbecue favorite!
