How to
- Start by washing and halving the tomatoes.
- Place them on a BBQ smoker or grill set up for indirect heat and smoke at 150°C or 300°F for about an hour until they are soft and imbued with a rich, smoky flavor.
- Meanwhile, peel and finely chop the onions and garlic.
- In a large pot, sauté the onions and garlic over medium heat until translucent and aromatic.
- Add the smoked tomatoes to the pot, mashing them slightly to break them down.
- Sprinkle in the Texas BBQ seasoning to enhance the smoky taste.
