How to

  1. Start by washing and halving the tomatoes.
  2. Place them on a BBQ smoker or grill set up for indirect heat and smoke at 150°C or 300°F for about an hour until they are soft and imbued with a rich, smoky flavor.
  3. Meanwhile, peel and finely chop the onions and garlic.
  4. In a large pot, sauté the onions and garlic over medium heat until translucent and aromatic.
  5. Add the smoked tomatoes to the pot, mashing them slightly to break them down.
  6. Sprinkle in the Texas BBQ seasoning to enhance the smoky taste.
  7. Pour in the beef broth and bring the mixture to a gentle simmer, allowing it to cook for about 20 minutes so the flavors can fully integrate. Use an immersion blender to puree the soup until it is smooth.
  8. Stir in the cream and warm the soup just until heated through.
  9. Serve your smoked tomato soup hot, garnished with a swirl of cream or some fresh herbs, if desired.
