Ingredients

  • 1 kg / 2.2 lbs chicken wings with skin

  • 2 tbsp Tweety BBQ seasoning
  • 125 g / 4 oz (about half a pack) butter

  • 1 tbsp hotsauce

  • 3 tbsp honey

  • small bag (50 g / 1.75 oz) natural potato chips

  • 25 g / 0.88 oz fried onions

How to

  1. Begin by prepping your chicken wings—make sure they're the meaty party wings.
  2. Rough them up slightly by making shallow incisions in the skin down to the bone. This doesn't dry them out; it only helps them absorb more flavor.
  3. Generously season the wings with Tweety BBQ seasoning and let them sit to marinate briefly.
  4. Fire up your grill, setting up the rotisserie attachment. Set the temperature to 180°C or 350°F and ensure the top vent is partially open to maintain airflow.
  5. Place the seasoned wings in a rotisserie basket, securing them loosely to allow for rotation. This rotation is crucial as it enables the chicken to baste in its own fats, creating crispy, flavorful edges.
  6. While the chicken cooks, prepare the glaze. Melt the butter in a saucepan, then stir in the hot sauce, honey, and a tablespoon of the Tweety BBQ seasoning. Keep the glaze warm on the side.
  7. After about 30 minutes, or once the chicken is visibly golden and crispy, remove the basket from the grill.
  8. Drizzle the hot butter-honey mixture over the wings while they're still hot.
  9. For an added crunch, crush a small bag of natural chips and mix in some fried onions and a bit more of the  seasoning. Sprinkle this crunchy topping over the wings.
