How to
- Begin by firing up your grill, setting up for indirect heat.
- While the grill warms, trim your steak of any excess fat or silver skin, and cut it into chunky bites.
- Season lightly with beef seasoning, mindful not to overpower the natural flavors. Wrap each steak chunk in a strip of bacon, securing with a toothpick if necessary.
- Once your BBQ reaches the right temperature, add a piece of smoke wood to the coals and set the grill grate to its highest position.
- Arrange the steak bites around the cooler part of the grill, and close the lid with vents adjusted for smoking.
- Meanwhile, chop any leftover beef fat and bacon into small pieces, placing them in a cast iron pot. Set this pot on the grill over direct heat to render the fat.
- As your bites cook, finely chop parsley, chives, and garlic, and grate some lemon zest. Combine these ingredients in a bowl, setting aside.
- Monitor the steak bites, turning occasionally until they reach an internal temperature of about 48°C or 118°F), which should take around 20 to 30 minutes.
- Finish by searing them directly over the coals to crisp the bacon.
- Remove the rendered beef and bacon fat from the grill, and stir into the bowl with your herbs and lemon zest.
