Bacon Bites

Celebrate your gathering with these delicious Steak and Bacon Bites. Easy to prepare and packed with flavor, they're sure to be a hit at any festive occasion.

Ingredients

  • 500 g / 1.1 lbs steak, with some fat

  • 250 g / 8.8 oz bacon strips

  • 1 tbsp PitmasterX beef seasoning
  • 20 g / 3/4 oz fresh parsley

  • 10 g / 1/3 oz fresh chives

  • 1 garlic clove

  • 1 lemon

How to

  1. Begin by firing up your grill, setting up for indirect heat.
  2. While the grill warms, trim your steak of any excess fat or silver skin, and cut it into chunky bites.
  3. Season lightly with beef seasoning, mindful not to overpower the natural flavors. Wrap each steak chunk in a strip of bacon, securing with a toothpick if necessary.
  4. Once your BBQ reaches the right temperature, add a piece of smoke wood to the coals and set the grill grate to its highest position.
  5. Arrange the steak bites around the cooler part of the grill, and close the lid with vents adjusted for smoking.
  6. Meanwhile, chop any leftover beef fat and bacon into small pieces, placing them in a cast iron pot. Set this pot on the grill over direct heat to render the fat.
  7. As your bites cook, finely chop parsley, chives, and garlic, and grate some lemon zest. Combine these ingredients in a bowl, setting aside.
  8. Monitor the steak bites, turning occasionally until they reach an internal temperature of about 48°C or 118°F), which should take around 20 to 30 minutes.
  9. Finish by searing them directly over the coals to crisp the bacon.
  10. Remove the rendered beef and bacon fat from the grill, and stir into the bowl with your herbs and lemon zest.
  11. Place the finished steak and bacon bites onto a hot plate, spooning over the herb and fat mixture.
  12. Serve immediately, squeezing a bit of fresh lemon over the top for an extra zing.
