Ingredients

  • 6 kg / 12 lbs pre-cooked bone-in ham

  • 150 g / 5 oz blueberries

  • 1/2 lemon

  • 60 ml / 1/4 cup ketchup

  • 3 tbsp dark brown sugar

  • 4 tbsp honey

  • 1 tbsp Worcestershire sauce

  • 3 shots Whiskey (Tennessee Fire preferred)

  • 2 tbsp PitmasterX Deli BBQ seasoning
  • 1 star anise

  • 1 cinnamon stick

  • 30 ml / 2 tbsp apple juice

  • 2 tbsp mustard

How to

  1. Fire up your BBQ grill and create an indirect heat zone using bricks to space out the coals. Place a couple of fire starters and cover with charcoal briquettes. Once the fire has died down, add your chosen smoke wood, positioned just over the coals.
  2. Set the grill grates to their highest position and place the 6 kg ham on the grill. The ham should already have a protective cap on the bone; remove it if you prefer, as smoking at low temperatures (120°C / 240°F) will prevent the bone from burning. Insert a thermometer to monitor the ham’s internal temperature.
  3. To make the glaze, blend together blueberries, lemon juice, ketchup, brown sugar, honey, Worcestershire sauce, whiskey, and PitmasterX Deli seasoning until smooth. Pour the mixture into a pan, add a star anise and cinnamon stick, and bring to a simmer for about 5 minutes to infuse the flavors. Strain the glaze to remove any large pieces, ensuring a smooth consistency.
  4. Begin brushing the glaze onto the ham during the final stages of cooking, applying several layers to create a sticky, flavorful crust. Keep a small amount of glaze to serve at the table.
  5. For an additional tableside sauce, mix honey, apple juice, a little Worcestershire sauce, whiskey, PitmasterX Deli seasoning, and mustard. This honey mustard sauce complements the smoky sweetness of the ham beautifully.
  6. After about 3,5 hours of smoking and glazing, your ham should be bursting with the flavors of the glaze and smoke wood, presenting a perfect festive dish. Slice and serve the ham, drizzling extra blueberry glaze as desired. Enjoy the rich, smoky flavors with the contrast of the sweet and tangy sauces.
