Ingredients
2 kg or about 4.4 lbs Chuck steaks
- as needed PitmasterX Beef seasoning
4 large onions
2 tbsp dark brown sugar 2 belgian beers (600 ml or about 2,5 cups)
60 ml / 1/4 cup ketchup
1/2 tbsp mustard
2 tbsp Worcestershire sauce
2 bay leaves
as needed potatoes for fries
as needed beef tallow

How to
- Begin by preheating your grill to medium-high, around 230°C or 450°F, and set it up for indirect heat. Season the chuck steaks generously with PitmasterX's Beef seasoning, then place them on a tray and sear them directly over the heat until they achieve a perfect Maillard effect, enhancing their flavor.
- Next, slice your onions while your steaks sear. Once you've achieved a good sear, layer the steaks and onions in a Dutch oven. Pour the Belgian beer over them just enough to halfway submerge the ingredients. Sprinkle in brown sugar, add ketchup, mustard, Worcestershire sauce, and tuck the bay leaves into the mix.
- Cover the Dutch oven and place it on the cooler side of the grill. Allow the stew to simmer gently for about 2 and 1/2 to 3 hours. The beef should tenderize beautifully, infusing with the flavors of the beer and seasonings.
- Meanwhile, prepare your fries. Slice the potatoes and soak them in water to remove excess starch. Heat beef tallow in a cast iron skillet to about 120°C or 250°F and fry the potatoes lightly. They should not be fully cooked at this stage. Remove, let them cool, then bring the tallow up to 180°C or 350°F for the final fry until golden and crispy. Season the fries generously with PitmasterX's Chicken seasoning.
- Serve the stew garnished with crispy fries and, if you like, a sprinkle of shredded cheddar cheese melted over the top.
