  1. Begin by firing up your BBQ or grill to a high temperature, aiming for about 230°C or 450°F.
  2. While it heats, cut the chuck steak into dice-sized cubes. Next, twice grind the meat at home for a finer consistency.
  3. For the compound butter, mix 100 grams of softened butter with chopped chives, parsley, and a teaspoon of Texas BBQ seasoning. Shape the butter into a log with baking paper, then chill it in the refrigerator.
  4. Shape the ground beef into burgers, ensuring they match the size of your buns. Pre-shape these patties using a burger press if available, placing them between sheets of baking paper. Set aside.
  5. Now, prepare the burger sauce by combining Greek yogurt with chili oil, honey, and an extra teaspoon of your favored BBQ seasoning. I'm using the Tweety BBQ seasoning. Adjust the spice level with the amount of chili oil. Let this sauce sit to enhance its flavor.
  6. Back to the grill, place a heavy skillet or cast iron plate on it to get hot. Start by frying your burger buns in some of the compound butter until golden, then set them aside.
  7. Next, brush your burger patties with yellow mustard and place them on the hot grill. Add a slice of cheese on each patty and let it melt as the patties cook to perfection, achieving a nice sear.
  8. In the same skillet, add another lump of the compound butter and the thick onion slices. Cook until the onions are soft and caramelized.
