Ingredients

  • 1 or 2 red onions

  • 10 Jalapeño slices

  • 800 grams / 28 oz cream cheese

  • 100 grams / 3.5 oz shredded cheddar cheese

  • 100 grams / 3.5 oz shredded Gouda cheese

  • 1 tbsp BBQ sauce

  • to taste Pitmaster's pork seasoning
  • A handful of fresh chives (for garnish)

  • 1 smoked sausages

  • Olive oil: as needed for greasing

  • Butter: a few tablespoons for basting

  • Salt and pepper: to taste

How to

  1. Begin by boiling your large potatoes. Place them in a pot with enough water to cover and boil for about 18-20 minutes, or until they're tender enough to pierce with a fork. While the potatoes cook, heat a small pan on the BBQ and render the bacon until it's crispy. Set the bacon aside, and in the same pan, add diced red onions and jalapeños if using, cooking them until soft.
  2. In a large bowl, combine the crispy bacon, sautéed onions, jalapeños, cream cheese, shredded cheddar, and Gouda. Mix these ingredients thoroughly to create your filling. Once the potatoes are cooked, let them cool just enough to handle, then peel and mash them.
  3. Grease your muffin tins or potato trays with olive oil to prevent sticking. Press the mashed potatoes into each cup, forming a well in the center of each. Spoon the bacon and cheese mixture into these potato cups, pressing down lightly to compact. Top each cup with a slice of smoked sausage and a brush of melted butter.
  4. Place the trays in your BBQ, setting the temperature to 250°C (482°F). Let them cook for about 5 minutes, then brush with more butter to ensure even browning and continue cooking for another 15-20 minutes or until the edges are crispy and golden.
  5. Once done, let them cool slightly in the trays to set before removing. Garnish with chopped chives and a drizzle of sweet BBQ sauce.
