Ingredients

  • 8 chicken thighs

  • 4 tbsp PitmasterX chicken seasoning
  • 3 tbsp olive oil

  • 100 grams / 3.5 oz candy tomatoes

  • 4 tbsp spring onions

  • 100 grams / 3.5 oz chopped pickles

  • 2 tbsp whole grain mustard

  • 200 grams (about 1 cup) mayonnaise

  • 200 grams (about 1 cup) crème fraîche

  • 2 tbsp sweet chili sauce

How to

  1. Begin by seasoning the chicken thighs with PitmasterX chicken seasoning, ensuring both sides are well coated. Drizzle with olive oil and give them a good rub to make sure the seasoning sticks.
  2. Let the chicken marinate in the refrigerator for at least 4 hours to soak up the flavors.
  3. Once your BBQ is hot and ready at about 200°C or 392°F, place the chicken thighs on the grill. Cook them until they're beautifully charred and fully cooked through, about 6-8 minutes per side. Remove from the grill and let them cool slightly.
  4. While the chicken cools, prepare the salad components. Halve the candy tomatoes, chop the spring onions and pickles, and place them in a large salad bowl.
  5. Whisk together the whole grain mustard, mayonnaise, crème fraîche, and sweet chili sauce to create the dressing.
  6. Cut the cooled chicken into bite-sized pieces and add them to the bowl with the tomatoes, onions,pickles, and  dressing. Mix thoroughly to combine. Serve this hearty BBQ Chicken Salad on its own or as a satisfying accompaniment to your BBQ feast.
