How to

  1. Begin by preparing your beef: trim any leftover silver skin and season both sides lightly with salt, pepper, garlic powder, onion powder, and both PitmasterX seasonings. Let the beef sit at room temperature to allow the seasonings to penetrate deeply.

  2. While the beef rests, make the salsa. Combine the diced cherry tomatoes, chopped red onion, cilantro, and lime juice in a bowl. Sprinkle with PitmasterX Gyros seasoning and stir well. Place the salsa in the refrigerator to chill and meld the flavors.


  3. Next, prepare the honey chipotle dip


  4. Fire up your grill to high heat around 230°C or 450°F, then reduce to medium around 180°C or 350°F after searing the steak on both sides to develop a crust. Continue cooking, flipping occasionally, until the internal temperature reaches 52°C or 125°F. Let the steak rest off the heat for about 15 minutes; this helps redistribute the juices.

  5. Grill the tortillas briefly on the hot grill, using the steak residues for added flavor. Slice the steak against the grain into thin strips and assemble your tacos with generous helpings of the sliced steak, chilled salsa, and a drizzle of the honey chipotle dip. Serve immediately and enjoy the burst of flavors in each bite!
