How to

  1. Begin by combining 4 tablespoons of PitmasterX Tweety BBQ seasoning with 1/2 cup of plant-based oil, the juice of half a lemon, a tablespoon of dark brown sugar, and a tablespoon of soy sauce in a large bowl. Whisk these together until well blended.
  2. Next, take 1 kilo or 2.2 pounds of pork neck, already cut into thin strips, and place them in a sealable plastic bag. Pour your freshly made marinade over the pork strips, ensuring each piece is nicely coated.
  3. Seal the bag, then gently shake it to allow the marinade to thoroughly mix with the meat. Once mixed, reopen the bag to push out all the air, then reseal it. This step ensures the pork marinates evenly. Let the pork marinate in the fridge for at least 2 hours, or overnight for deeper flavor.
  4. When ready to cook, fire up your grill to a medium-high heat, aiming for a temperature of around 200°C or 392°F. Place the marinated pork strips on a cast iron grill grate and sear them until they are beautifully golden brown and deliciously crispy, which should take about 4-5 minutes on each side.
  5. Serve these luscious BBQ pork neck strips right off the grill. They're perfect on their own or can be paired with a refreshing salad or your favorite grilled veggies.
