How to

  1. Season both sides of the ribs generously with PitmasterX Texas BBQ rub.
  2. Fire up your grill. Once the grill is up to temperature, place a chunk of Napoleon Brandy Barrel smoke wood on the charcoal to generate smoke. Put the seasoned bacon ribs on the grill and close the lid.
  3. Smoke at a low temperature around 120°C or 250° until the internal temperature of the ribs reaches around 92°C or 198°F.
  4. Once the ribs reach the desired internal temperature, remove them from the grill. Let them rest for at least 5-10 minutes.
  5. Wrap the ribs in aluminum foil and transfer them to an oven or grill set to a temperature of 65°C or 150°F. Let the ribs rest at this temperature for 10 hours to allow the flavors to meld and the meat to become tender.
  6. After resting, unwrap the ribs and slice them.
