For the Blue Cheese Dip

  • 1/2 cup mayonnaise

  • 1/4 cup cream

  • 1/2 tbsp ground black pepper

  • 1 tbsp fresh chopped chives

  • 100 grams / 3.5 oz blue cheese

How to

  1. In a large bowl, combine the chicken wings with PitmasterX Chicken rub, buttermilk, and pickle juice.
  2. Mix well to ensure all wings are coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
  3. Prepare PitmasterX's Sweet Apple BBQ sauce, adding a few drops of Frank's Red Hot Original sauce for extra flavor.
  4. Preheat the barbecue to high heat.
  5. Remove the chicken wings from the refrigerator and let excess moisture drip off. Sprinkle a light layer of PitmasterX Texas BBQ rub over the wings.
  6. Grease the barbecue grates with olive oil to prevent sticking.
  7. Place the chicken wings on the barbecue and lower the heat. Cover and cook for about 25 minutes, turning halfway through, until they reach an internal temperature of 92°C or 198°F.
  8. Transfer the cooked wings to a large bowl and drizzle with the homemade BBQ sauce. Toss to coat evenly, then cover the bowl with aluminum foil and let rest.
  9. Meanwhile, prepare the Blue Cheese Dip by mixing mayonnaise, heavy cream, black pepper, chives, and crumbled blue cheese in a bowl until well combined.
  10. Arrange the chicken wings on a serving platter and serve with the Blue Cheese Dip on the side. For an extra kick, drizzle with more Frank's Red Hot Original sauce if desired.
