For a burger, brioche hamburger buns are a must. This dough recipe includes egg, milk, and butter, making it an enriched dough, brioche dough. It's slightly denser but still airy with a soft interior. It's not as fluffy as regular white buns, making it perfect for burgers.

Ingredients

  • 50 grams or 1.7 oz. warm water

  • 12 grams or 1/2 oz. granulated sugar

  • 7 grams or 1/4 oz. dry instant yeast

  • 250 grams or 9 oz whole milk

  • 2 eggs

  • 500 grams or 1 lbs all-purpose flour

  • pinch of salt

  • 75 grams or 2.6 oz butter, at room temperature

How to

  1. In a bowl, combine warm water, dry yeast, and sugar. Allow the yeast to activate.
  2. Add milk, egg, flour, and salt to the yeast mixture and knead until a smooth dough forms.
  3. Gradually incorporate tablespoons of butter into the dough until fully combined.
  4. Cover the dough with plastic wrap and let it rise until doubled in size.
  5. Divide the dough into 8 equal portions and shape them into balls.
  6. Place the dough balls on a baking sheet, leaving space between them, and let them rise again until almost doubled.
  7. Brush the risen buns with beaten egg yolk and sprinkle with sesame seeds.
  8. Preheat the oven to 180°C  or 360°F and bake the buns for 20 minutes or until golden brown and cooked through.
  9. Allow the buns to cool before assembling the sandwiches.
