How to

  1. Rub the hare with olive oil and coat it with PitmasterX Gyros seasoning, ensuring the entire hare is covered.
  2. Skewer the hare on a rotisserie.
  3. Place the hare on the barbecue and set it to mild heat from below. Let it come to temperature for 10 minutes.
  4. Quarter the tomatoes and remove the core.
  5. Cut the courgette into bite-sized chunks.
  6. Finely chop the red onion.
  7. Place them in a skillet along with a piece of Feta cheese.
  8. Drizzle with olive oil and sprinkle with PitmasterX Gyros seasoning.
  9. Place the skillet under the hare on the barbecue, ensuring they do not touch.
  10. Insert a thermometer into the thickest part of the hare. Turn on the back burner and set it to low.
  11. Meanwhile, slice the lemon into rounds, add butter, drizzle with olive oil, and sprinkle with PitmasterX Gyros seasoning. Let it melt on the barbecue.
  12. Once the butter mixture has melted, brush it over the hare.
  13. The hare is done when it reaches an internal temperature of 75°C or 165°F. Remove it from the barbecue.
