Chuck Steak Tacos

Ingredients

  • 1 kg / 2.2 lbs Chuck Steak

  • 4 tbsp Texas BBQ rub
  • 4 tbsp Tweety bbq rub
  • 2 bulbs of garlic

  • 3 yellow onions

  • 3 jalapeno peppers

  • 7 tomatoes

  • 1 bunch of cilantro

  • 1 bunch of pring onions

  • 24 small tortillas

  • 250 gram / 9 oz Young Gouda cheese

  • 1 pcs Chili ancho

  • 1 pcs Chile d'arbol

How to

Ingredients Preparation:

  1. Create a flavor profile for your chuck steak by applying a base layer of Texas BBQ Rub followed by a layer of Tweety BBQ Rub.
  2. Season both sides of the chuck steak.
  3. Fire up your BBQ and set the temperature to 180°C or 355°F.
  4. Place the steak on the grill grate, allowing for searing and roasting simultaneously.
  5. Add a chunk of smoking wood to impart a smoky flavor to the chuck steak.
  6. Once the steak has a beautiful brown color, remove it from the barbecue; it doesn't need to be fully cooked yet. Set it aside.
  7. Grill the vegetables. Place garlic, onions, and peppers directly on the fire. Roast the tomatoes in a pan to preserve the released juices.
  8. Once the vegetables are roasted, let them rest for 20 minutes in aluminum foil.
  9. Peel the onions and garlic and chop all the vegetables.
  10. Heat a pan and add two tablespoons of beef tallow.
  11. Fry the onions, followed by the garlic, and finally, the peppers.
  12. Finely chop a chili ancho and a chile d'arbol and add stir fry them with to the vegetable mixture in the cast iron skillet. 
  13. Cut the chuck steak into small cubes and add them to the cast iron skillet.
  14. Add the roasted tomatoes and let it simmer for 2.5 to 3 hours. Occasionally check and add a bit of water if needed to prevent drying.
  15. After simmering, use a fork to pull the meat for the taco stuffing.
  16. Strain the stew through a sieve, separating the stuffing from the liquid. Save the liquid as the dipping sauce for the taco.
  17. Slice the spring onions and cilantro and mix it up. These will be the toppings for the taco.

 

Taco Assembly:

  1. Preheat your tacos by wrapping them in aluminum foil and placing them on the barbecue.
  2. Set up your BBQ with a flat-top griddle on a temperature of 340°C or 640°F.
  3. Place beef tallow on your plate.
  4. Dip a tortilla into the sauce and lay it on the plate.
  5. Add a portion of the beef and some of the sliced toppings.
  6. Sprinkle some cheese on the flat-top griddle and once it melts, flip it over.
  7. Once the cheese crust is formed, place it on the tortilla and fold it in half.
  8. Dip it into the sauce you prepared and taste the fantastic taco.
