Ingredients
Coca Cola Marinade
330 ml / 1½ cups Coca Cola
1 tbsp Worcestershire Sauce
1 tbsp chili flakes
½ lime
1 tbsp finishing salt
1 tsp garlic powder
1 tsp onion powder
Seasoning
1 tbsp paprika powder
1 tbsp onion powder
½ tbsp finishing salt
Beef Jerky
1 kg / 2.2 lbs eye of round (lean)
How to
Coca Cola Marinade
- Heat up a pan.
- Add 330 ml of Coca Cola to your pan and let it reduce by half on a medium heat.
- Add 1 tbsp Worcestershire sauce, 1 tbsp chili flakes, the juice of ½ lime, 1 tbsp finishing salt, 1 tsp garlic powder and 1 tsp onion powder.
- Mix it up and let it cool down before storing it in an air-tight container.
Smoked Beef Jerky
- Slice 1 kg or 2.2 lbs into extremely thin slices with a chef's knife.
- Add the sliced beef to a large bowl and add the Coca Cola Marinade.
- Mix it up with the marinade and push a ziplock bag or sheet of foil against the meat.
- Let it marinade for 2 hours.
- Fire up your smoker and set it up for an indirect temperature of 80°C or 180°F.
- Layer out all the individual slices of jerky on a smoking rack.
- Place the rack inside the smoker and smoke for 3 hours.
- Put all the Beef Jerky in a plastic ziplock bag and store in the fridge for 24 hours for the best results.
