- 4 kg pork sausage
- 2 white onions chopped
- 3 carrot chopped
- 2 fresh leeks chopped
- 6 cloves of garlic whole
- 2 kg tomato puree
- PitmasterX’s Classic BBQ rub
- 100 grams gouda cheese
Instructions
- Fire up your BBQ and set it for direct cooking with cast iron and a safe zone; I'm using a heat deflector and stainless steel grill grate as safe zone.
- Grill your sausages until dark brown and cooked at 70°C/160°F
- Reset your grill for Dutch oven cooking. I'm using the Kamado Joe spider for my dutch oven over direct heat.
- Pour in some olive oil.
- Cook the veggies until soft with a closed lit.
- Add 2 Kg of tomato puree.
- Let it cook with a closed lit for around 30 minutes.
- Add 1 tbsp of my classic BBQ rub.
- Mix it up and let your sauce rest for a couple of minutes.
- Stick in all the pork sausages striaght up in the sauce.
- Add around 100 gram sliced cheese on top.
- Put it back in the BBQ for 20 minutes with the lit closed before you want to serve it and your grilled sausages are done.
