Grilled Dutch Oven Sausage

  • Fire up your BBQ and set it for direct cooking with cast iron and a safe zone; I'm using a heat deflector and stainless steel grill grate as safe zone.
  • Grill your sausages until dark brown and cooked at 70°C/160°F
  • Reset your grill for Dutch oven cooking. I'm using the Kamado Joe spider for my dutch oven over direct heat.
  • Pour in some olive oil.
  • Cook the veggies until soft with a closed lit.
  • Add 2 Kg of tomato puree.
  • Let it cook with a closed lit for around 30 minutes.
  • Add 1 tbsp of my classic BBQ rub.
  • Mix it up and let your sauce rest for a couple of minutes.
  • Stick in all the pork sausages striaght up in the sauce.
  • Add around 100 gram sliced cheese on top.
  • Put it back in the BBQ for 20 minutes with the lit closed before you want to serve it and your grilled sausages are done.
