Charcoal Grilled Barbecue Ribs

This is a budget-friendly way to enjoy ribs! We're using the cheapest cut of ribs you can find, but don't let that fool you. With the right preparation and seasoning, these ribs are sure to impress. What makes this recipe unique is the combination of spices and flavors I'm using. We're going for a savory and slightly sweet taste with a hint of smokiness.

Ingredients

  • 3 racks of ribs (without too much meat)

  • 2 cloves of garlic

  • 1 red onion

  • ½ nutmag (grated)

  • 1 tbsp finishing salt

  • ½ tsp black pepper

Herb Butter

  • 250 grams / 8.8 oz butter

  • 20 grams / 0.25 oz fresh parsley

  • 2 cloves of garlic

  • 1 red onion

  • 1 tsp black pepper

  • 2 tsp Fleur de Sel sea salt

How to

  1. Slice fine 2 cloves of garlic and a red onion.
  2. Grind it fine in your mortar and pestle.
  3. Grate half a nutmeg above the puree with grater.
  4. Add 1 tbsp of finishing salt and half a tsp of pepper to the puree.
  5. Mix it up and perform a taste test. It should taste very powerful.
  6. Keep the membrane on the ribs as protection.
  7. Marinade the ribs with your seasoning on both sides.
  8. Fire up your BBQ. I'm using the Charcoal Professional by Napoleon so i'm filling all the baskets with a thin layer of light burning charcoal.
  9. Lower the charcoal beds to grill at a lower temperature.
  10. Cut every rack of ribs in 3 pieces.
  11. Place them with the ribs pointing up on top of the grill grates.
  12. Once you have the maillard browning effect on the meat side, flip them.
  13. Keep moving them around to cooler and hotter spots to let the ribs cook evenly.
  14. Move them to a cooler spot once they have a good looking crust and let them cook with a closed lit for around 15/20 minutes.
  15. Wrap them in aluminium foil and store them in an insulated bag or box.

 

Herb Butter

  1. Add 250 grams or 8.8 oz cup of butter to a bowl.
  2. Add chopped parsley, garlic and red onion to the butter.
  3. Season with 2 tsp salt and 1 tsp pepper.
  4. Add 1 tsp of butter to each cut of ribs and let it melt before serving.
