The first thing that you want to do in this recipe and actually every burger recipe is prepair everything that can be prepaired because once those burgers are flipped you want to be ready for the grand finale.
Grab around 3 pork sausages ( that should be around 300 grams of meat) and slice it open with your chef's knife. Turn the sausage inside out and shape the meat into 2 seperate burger patty's on a sheet of baking paper so it doesn't stick to the board.
Slice of 2 thick slices of english bacon. Ofcourse you can use pre-sliced english bacon but for an Irish Breakfast Burger i tend to go bigger then ussual so I'm using an uncut piece of english bacon for my thicker slices.
Slice a tomato in thick slices. I want to use 3 slices per burger but if you cant get it out of one tomato do another one.
Slice of around 4 slices of Black pudding. This stuff is what we call in the Netherlands ''Bloedworst'' which means blood sausage. But please don't let that name scare you because its delicious and the burger would not be as great without it.
Crumble down the slices of black pudding.
Slice the burger buns in half.
Slice the mushrooms into thin slices.
