The combination of juicy tomatoes and smoky flavor, make for a perfect side dish or even a main course on a summer evening. Ingredients
- 1 courgette chopped
- 1 red bell pepper chopped
- 1 white onion schopped
- 1 clove of garlic chopped fine
Instructions
- Slice the top of the tomatoes.
- Scoop out the inside of the tomatoes.
- Chop up all the ingredients.
- Heat up a pan with double the amount of olive oil that you would normally use.
- Fry the onion and garlic first and then add the rest. Let it become soft.
- Put it inside the tomatoes.
- Add a chunk of smokewood to your charcoal or in my case i'm using a big burning log to put on my Napoleons' grill grade and put the tomatoes on top of the wood.
- Let it smoke for around 5/10 minutes with a medium BBQ temperature in a smokey chamber and your Tomato Side Dish is done.
