Pork Tenderloin is a very popular meat for everyday cooking. It is lean, it is tender and it is affordable. However, it is not always cooked right. With this recipe I am going to show you how to make your pork tenderloin juicy and tender. I am also show how to add flavor and make it taste even better.

Equipment
- 3 Applewood chunks
- 1 Pen thermometer
Ingredients
- 4 ps Pork Tenderloin +/- 1 kilo
Injectionfluid
- 100 ml Applejuice
- 50 ml Whiskey
- 1 tbsp Pitmasterx’s Classic BBQ rub
For the rub
- 1 pice Pitmasterx’s Classic BBQ rub
- 1 tsp chilipowder
- 1 tsp cuminpowder
Pitmasterx’s Sweet Apple BBQ Sauce
- 1 cup ketchup
- 0,25 cup appel juice
- 1 tbsp worchestershire sauce
- 0,5 tbsp fresh ground pepper
- 1 tbsp Pitmasterx’s Classic BBQ rub
- 1 tbsp honey
- 3 tbsp cane sugar
Instructions
- Fire up your BBQ set it to a smoking temperature of 120 degrees Celsius.
- Mix the ingredients for the PitmasterX’s Classic BBQ rub and the chili powder and cumin powder.
- Mix the ingredients for the injection fluid and inject into the pork tenderloins with the injection needle. You have added enough when the tenderloin can hold anymore fluids, then let the rest for 5 minutes to let the fluids spread in the meat.
- Without drying the tenderloins, sprinkle on a layer of Pitmasterx’s Classic BBQ rub.
- Add a chunk of apple smoke wood to your fire and place the tenderloins over indirect heat.
- Mix the ingredients for the Sweet Apple BBQ sauce and bring the sauce to a boil and let it cool back down again.
- Check the tenderloins after 30 minutes, when they picked up a bit of a smoke color. Then it’s time the brush on Pitmasterx ‘s Sweet Apple BBQ sauce
- Let them continue to smoke until the reach a core temperature of 62 degrees Celsius. Then take them of the barbecue and let them rest.

Take your time to start up the barbecue. You don’t the barbecue to overshoot in temperature.
When selecting your pork tenderloin choose a tenderloin from a pig that has been raised well. You will be able to taste the difference.
