Spit roasted roosters

  • 4 little roosters
  • 1 kg minced meat 50/50 pork /beef
  • 2 eggs
  • ¼ cup breadcrumbs
  • 1 clove of garlic
  • 1 onion
  • 1 tablespoon olive oil
  • 2 teaspoons yellow mustard
  • 1 teaspoon tomato puree
  • ½ cup fine grated parmesan cheese
  • ½ tablespoon fleur de sel
  • 1 teaspoon fine ground black pepper

How to

  1. Chop the onion and garlic fine and sweat them in a pan with the olive oil.
  2. Mix all of the ingredients in a bowl except for the roosters and knead them thoroughly
  3. Stuff the roosters with the minced meat and tie the legs together.
  4. Place your rooster on the spit and secure them.
  5. Set the backburner on your barbecue to the lowest position and let the roosters slowly come up to temperature.
  6. When the core of the stuffing reached a core temperature of 65 degrees Celsius or 149 degrees Fahrenheit. The roosters are done.
  7. Take the roosters of the barbecue and let them rest 10 minutes before eating.
