south American BBQ picanha

This is our version of a black Angus Picanha Brazilian style.
Brazilians love to cook with skewers on open fires, it's just something really magical. Slice the meat off, straight from the fire.. We are going to just that with some black Angus Picanha!

Ingredients
 

chimichurri

  • ½ cup parsley chopped fine
  • ½ chili pepper de-seeded and sliced fine
  • 2 cloves garlic sliced fine
  • 1 tbsp salt
  • 1 tbsp oregano dried
  • 1 tbsp paprika powder
  • ½ tbsp red wine vinegar
  • ½ tbsp ground black pepper
  • ¼ cup olive oil

chimichurri mayonnaise

  • 500 ml sunflower oil
  • 2 eggs
  • ½ tbsp apple cider vinegar
  • 1 tbsp black pepper
  • ½ cup parsley chopped fine
  • ½ chili flakes
  • 2 cloves garlic sliced fine
  • 1 tbsp salt
  • 1 tbsp oregano dried
  • 1 tbsp paprika powder
  • ½ tbsp red wine vinegar
  • ½ tbsp ground black pepper

Instructions
 

  • Cut the Picanha into steaks against the grain.
  • If the fat cap is too thick, cut some of it off.
  • Slice a little bit into the fat cap both way's in a diamond shape so the fat gets more surface.
  • Put the steaks on the skewer with the thickest steak in the middle.
  • Fire up your BBQ and remove the grill grates and heat deflectors and let it come up to temperature.
  • Now it's time to make a chimichurri. Add the ingredients for the chimichurri into a bowl and stir it well.
  • For the chimichurri mayonnaise, grab a measuring cup and add the sunflower oil, the eggs, the vinegar and the pepper.
  • Use an immersion blender to turn it into a mayonnaise and then add the rest of the ingredients for the chimichurri mayonnaise, stir it well and your mayonnaise is done!
  • Now the charcoal should be completely lid up and you can place the skewer into your BBQ.
  • Rotate every minute or so to create an even crust.
  • If the crust is there, you can slice a thin layer of it and place it back onto the grill.
  • Keep repeating this process until there is nothing left on the skewer.
  • Serve this with the chimichurri and chimichurri mayonnaise.
