I love smoking food, it’s a great way to add flavor and make the meat tender and juicy. Just think of spare ribs, brisket, chicken and all the other types of meat I have smoked for you. That’s why it’s so strange that we don’t smoke steaks more often.I am not talking about the reversed sear method, where we grill the steak at the end. I am talking about proper smoking. I am talking about layering of flavor and building a crust.

Ingredients
The rub
- 3 tbsp fleur de sel
- 1 tbsp parsley finely chopped
- 1 tbsp oregano finely chopped
- 1 tbsp paprika powder
- 1 tbsp onion powder
- 1 tbsp garlic powder
- ½ tbsp grounded pepper
Herb olive oil
- 100 ml olive oil
- 3 tbsp parsley finely chopped
- ½ tbsp fleur de sel
- 1 tsp grounded pepper
- 1 clove garlic crushed
- 1 tbsp Parmesan cheese grated
The cheese
- 1 piece Camembert rounded
- 1 clove garlic chopped in thin slices
- 3 springs thyme
- 1 tsp fleur de sel
- 1 tsp grounded pepper
Instructions
- Clean the bone of the tomahawk.
- Drill a hole at the very end.
- Set up your barbecue for indirect smoking session at 140°C/285°F.Â
- Make the rub for your tomahawk, mix all the ingredients well together en rub the tomahawk with a binder. (we used mustard)
- Sprinkle the rub on the tomahawk and hang the tomahawk in your barbecue.
- Use a thermometer to determine when it’s ready it should be ready when it hits a core temperature of 54°C/130°F.Â
- Remove the Camembert out of the wooden box and replace the plastic around it with baking paper.
- Remove the top of the Camambert and put some garlic and thyme on to it.
- Add some salt and pepper.
- Put the wooden box with the Camembert into the barbecue.
- Grab the Turkish bread and slice it into parts.
- Make the herb olive oil by adding the ingredients into a bowl and stir it well.
- Rub the oil well into the bread and smoke it on your smoker until it’s golden brown.
- Now you can enjoy your smoked tomahawk with a delicious side dish and an excellent dip.
