Smoked Cheddar Jalapeno Meatloaf

Ingredients
 

  • 1 kg minced beef
  • 2 eggs
  • 100 grams bread crumb
  • 8 tbsp PitmasterX Classic BBQ rub
  • 300 grams pickled jalapeno's
  • 500 grams cheddar
  • 2 tbsp mustard
  • 2 tbsp mayonaise
  • 250 grams panko bread crumbs
  • 150 grams dried parmesan cheese

BBQ Sauce

  • 400 ml ketchup
  • 100 ml kecap manis
  • 100 grams brown sugar
  • 1 tbsp worcestershire sauce

Instructions
 

  • Put the meat in a bowl and mix with2 eggs, breadcrumbs and some of my own homemade BBQ rub
  • Knead the minced beef until you have a soft doughy consistancy.
  • Blend up some pickled jalapenos and add it to the minced beef while mixing it.
  • Shred up some cheap factory cheddar cheese and add it little by little to the beef as well.
  • Get a sheet of baking paper and place it in a bread baking tray.
  • Add the minced meat mixture and press it down as much as you can and spread it out evenly.
  • Fire up the smoker. In my case it's the Masterbuilt smoker. I'm using hardwood charcoal for this smoking session.
  • Put a thermometer inside the meatloaf to keep track of the internal temperature.
  • Let the BBQ smoke at a temperature of 120°C/248°F untill it hits a temperature of 65°C/150°F.
  • Let it cool down for 15 minutes and transfer it to a wide open oven proof tray upside down. In my case i'm using a paella pan.
  • Comepletely cover it up with mayonaise and mustard.
  • Mix panko breadcrumbs with dried parmesan and BBQ rub and cover the meatloaf entirely with this mixture.
  • Crank up the heat of the BBQ to 200°C/392°F.
  • Put the tray with the meatloaf in and let it built up crust for around 25/20 minutes untill your meatloaf is done and can be dressed up with some BBQ sauce on the side.

BBQ Sauce

  • Heat up a pan and put in all 4 ingredients of the BBQ sauce.
  • Bring it up to a boil and your BBQ sauce is done.
