Ingredients
2 onions, finely sliced
2 tbsp / 30 g butter
200 g / 7 oz tomato paste
500 ml / 2 cups apple juice (high quality, no added sugar)
2 tbsp / 30 ml mustard
1 tbsp / 15 ml Worcestershire sauce
- 3 tbsp PitmasterX Pork seasoning
1 tsp Maggi
¼ tsp MSG (optional)
50–100 ml / 3–7 tbsp water (to adjust consistency)

How to
- Melt the butter in a pan over low heat, add the finely chopped onion, and cook slowly until soft, sweet, and lightly caramelized.
- Add the tomato sauce and cook it down gently, stirring occasionally until it darkens in color and most of the moisture has evaporated, creating a concentrated, naturally sweet base.
- Pour in the apple juice and continue cooking until it reduces again and thickens, repeating the process of concentrating the natural sugars.
- Add mustard, Worcestershire sauce, PitmasterX Pork seasoning, maggi and optional MSG, then stir well and let it simmer briefly to combine all flavors.
- Taste the sauce and adjust with salt if needed, then add a small amount of water if the consistency is too thick.
- Carefully blend the hot sauce until smooth, then strain it through a sieve for an ultra-smooth texture.
- Let the sauce cool before using or storing, and use it as a finishing sauce for ribs or grilled meats.
