How to

  1. Preheat your BBQ for direct grilling at medium-high heat, around 200°C / 392°F.
  2. Place the green tomatoes (or tomatillos), jalapeños, and garlic cloves directly on the grill grates and roast them until lightly charred and softened, turning occasionally for even cooking.
  3. Remove the roasted vegetables from the grill and transfer them to a blender.
    Add salt, black pepper, and the juice of half a lemon, then blend until smooth or slightly chunky depending on your preference.
  4. Taste the salsa and, if the acidity is too sharp, add a small pinch of sugar to balance the flavors.
