  • 120 ml / 4 fl oz sweet soy sauce

  • 1 tbsp sesame seeds

  • 1 tsp chili flakes

  • 3 tbsp Texas BBQ seasoning
  • 60 ml / 1/4 cup tomato paste

  • 1 medium cayenne pepper

  • 4 tbsp maple syrup

  • 50 g / 1/4 cup dark brown sugar

  • 50 g / 1/4 cup unsalted butter

How to

  1. Begin by marinating the beef ribs. Place the ribs in a large plastic bag and pour over 120 ml of sweet soy sauce, ensuring the ribs are evenly coated. Seal the bag and refrigerate for 24 hours to allow the marinade to penetrate deeply.
  2. After marinating, remove the ribs from the bag, discarding excess marinade. Pat the ribs dry and season with a generous coating of sesame seeds, chili flakes, and Texas BBQ seasoning for added flavor and texture.
  3. Prepare your grill for smoking by setting it to a low temperature of about 120°C or 250°F. Use charcoal briquettes and a chunk of firewood to achieve a steady smoke.
  4. Place the seasoned ribs on the grill grates and close the lid. Smoke the ribs for several hours, maintaining the temperature and managing airflow with the vents.
  5. While the ribs are smoking, prepare the BBQ sauce. In a saucepan, combine tomato paste, sliced cayenne pepper, chili flakes, Texas BBQ seasoning, maple syrup, and 60 ml of soy sauce. Bring to a boil, then reduce heat and simmer until thickened. Strain the sauce into a glass jar for later use.
  6. After the ribs have smoked for a few hours and have a nice crust, transfer them to a tray lined with slices of butter and a sprinkle of dark brown sugar to balance the saltiness. Cover with aluminum foil and return to the grill. Let them cook until tender, about 3 more hours.
  7. For the final touch, glaze the ribs with the prepared barbecue sauce and return them to the grill, uncovered, to set the glaze and achieve a sticky finish. After about 15 minutes, remove the ribs from the grill and let them rest briefly before serving.
