  • 3 tbsp olive oil

How to

  1. Start by preparing the marinade for the chicken. In a large bowl, combine cubed chicken breast with olive oil, lemon juice, lime juice, finely chopped garlic, dried oregano, salt, and black pepper. Stir in Greek yogurt until everything is well coated. This marinade not only flavors the chicken but also tenderizes it. For best results, refrigerate the marinated chicken for at least a few hours, ideally in the morning if planning a BBQ in the evening.
  2. While the chicken marinates, prepare the tzatziki and salad. For the tzatziki, mix grated cucumber, a quarter cup of chopped parsley, one cup of Greek yogurt, three tablespoons of olive oil, two teaspoons of salt, a teaspoon of ground pepper, and a finely chopped garlic clove. Adjust the garlic to your taste. Add a tablespoon of lime juice for an extra zing. Refrigerate the tzatziki so the flavors meld beautifully.
  3. For the Greek salad, thinly slice the cucumbers and cube the tomatoes. Toss them in a bowl with the leftover parsley, a drizzle of olive oil, a squeeze of lemon juice, and fresh ground pepper.
