How to

  1. Preheat your smoker using beachwood chips to generate smoke and set it to a temperature of 130°C or 265°F.
  2. Chop the jalapeno peppers, cube the cheddar cheese, and slice the chuck beef into fine pieces.
  3. Grind the chuck beef, followed by the cheddar cheese, and then the jalapeno peppers to create a meat mixture.
  4. Combine the ground beef, cheese, and jalapenos together until well mixed, forming a meat dough.
  5. Shape the meat mixture into large burger patties, making three big patties.
  6. Season the burger patties generously with PitmasterX Texas BBQ seasoning, ensuring each patty is well coated.
  7. Place the seasoned burger patties in the preheated smoker and let them smoke until cooked to your desired level of doneness, adding more beachwood chips for continuous smoke infusion.
  8. While the burgers are smoking, prepare the mopping sauce by mixing together 1 part ketchup, 3 parts apple cider vinegar and Worcestershire sauce. Adjust the ratio to your taste preference.
  9. As the burgers near completion, periodically spritz them with the mop sauce to keep them moist and flavorful.
  10. Once the burgers are almost done, top each with a couple of slices of American cheese and allow them to melt over the patties.
  11. Toast the hamburger buns lightly on the grill for added flavor and texture.
  12. Assemble the burgers by placing the smoked jalapeno cheddar patties on the toasted buns and drizzling them with the homemade mopping sauce.
