It's ossenhaas puntjes.
Ossenhaas puntjes are made of the beef tenderloin, the part of the beef tenderloin that you cannot turn into tournedo.

  • 1 Beef tenderloin
  • 50 grams beef tallow


  • 125 ml Ketjap manis
  • 100 ml water
  • 2 cloves garlic sliced fine
  • 2 ginger thumb size sliced fine
  • ½ tbsp chili flakes
  • 3 tbsp sugar
  • 1 tbsp sea salt
  • 1 tsp ground black pepper fresh


  • Clean the whole tenderloin up, remove the silver skin and slice the medallion off the tenderloin.
  • We are going to use the leftovers for our ossenhaas puntjes. The medallion you can use for another recipe.
  • Slice the leftovers into cubes.
  • Create the marinade in a bowl by adding all the ingredients for the marinade and add the cubed into it, cover it up and set in in the fridge for at least 2 hours.
  • Add 2 cubes on a scure and repeat this until you scured all the cubes of meat.
  • Fire your BBQ up and add some beef tallow on your grilling surface.
  • Place the scures on the grill surface and keep rotating them.
  • Because it's not much meat, the grilling won't take long.
