Carne Guisada (Mexican Beef Stew)

Ingredients
 

Beef Stew

  • 700 grams flat iron steak cubed
  • 3 cloves of garlic sliced
  • 2 white onions diced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 2 roma tomatoes diced
  • 2 potatoes diced
  • 50 grams butter
  • 4 tbsp flour
  • 500 ml beef broth
  • 1 tbsp salt
  • 1 tbsp cumin powder

Homemade Tortilla

  • 3 cups all purpose flour
  • 1 tbsp baking powder
  • ¾ cup lard
  • 1 cup water

Instructions
 

Beef Stew

  • Slice up up the flat iron steak into thumb sized cubes.
  • Slice the onion, garlic, bell peppers, tomatoes and potatoes.
  • Fire up your BBQ and heat up your Dutch Oven
  • Let a stick of butter melt.
  • Immedialty add the beef as well and brown the outside.
  • Put the garlic and onion in and let it soften up for a minute.
  • Add 4 tbsp of flour.
  • Let the flour brown up.
  • Add beef broth.
  • Add the rest of the veggies and potatoes and let it simmer for at least 2 hours with the lit on top.
  • Bring up to flavor with cumin powder and salt and taste test it untill right.

Homemade Tortilla

  • Add flour to a deep tray followed by the baking powder.
  • Add around ¾ cup of lard from beef fat or pork fat and start kneading the flour together with the lard untill it turns grainy.
  • Slowly add little bits of water while continueing working your flour until it gets to a dough like consistency. In the end you used about 1 cup of water.
  • Pit everything on a table and start kneading it more roughly with your own body weight and the palm of your hands.
  • Take a goldball size piece of dough and roll it out with a roller.
  • Warm up a cast iron pan and sear your tortilla while flipping it every 15 seconds or so.
