Skirt steak is a delicious piece of meat to cook on the BBQ, but what if we cook it like a low and slow beef ribs.We are going to treat it like beef ribs. And build up so much smoke ring that my thin skirt steak is completely covered in smoke ring by the end of this cook.

Ingredients
- 1 tbsp salt
- 1 tbsp pepper
alabama white sauce
- 1 cup mayonaise
- ¼ cup apple cider vinegar
- 1 tbsp salt
- 2 tbsp garlic powder
- 1 tbsp sugar
- 3 tbsp lemon juice
- 1 tbsp black pepper
- 1 tbsp horse radish
- 1 tsp worcestershire sauce
Instructions
- Season the skirt steak with salt and pepper.
- Set your burnhard smoker to a 110°C/230°F.
- Let it smoke until you get a nice bark.
- Spray with beef broth.
- Wrap it in butchers paper.
- Make the Alabama white sauce.
- Let your skirt steak rest if it hit's a core temperature of 92°C/197°F.
- Serve on a baguette with sauce and jalapeno peppers.
