2 tsp sambal oelek
1 tsp chopped pickles
1 tsp pickle juice
1 tbsp finely chopped dill
1 tbsp finely chopped chives

100 g / ¾ cup all-purpose flour

4 eggs
1 bag Doritos
2 tbsp unsalted butter
8 hamburger buns
16 slices bacon
2 tomatos

How to
- Start by making the spicy chicken sauce: combine the mayonnaise, sambal oelek, chopped pickles, pickle juice, dill, chives, and PitmasterX Chicken seasoning in a jar.
- Close the lid tightly and shake well until everything is fully mixed. This spicy, creamy sauce will bring a bold flavor to your burger.
- Flatten the chicken thighs evenly using a meat mallet or rolling pin.
- In one bowl, mix the flour with PitmasterX Chicken seasoning. In a second bowl, beat the eggs.
- Crush the Doritos in a plastic bag until they form coarse crumbs.
- Coat each chicken thigh in the seasoned flour, shaking off any excess.
- Dip into the beaten eggs, then press into the Dorito crumbs until fully coated.
- Preheat your BBQ to medium heat and place a flat-top griddle or skillet on the grill.
- Melt the butter on the surface. Briefly toast the burger buns cut-side down until golden.
- Grill the bacon strips until crispy—two per burger.
