I like my ribs big so whenever i have a lot of people coming over belly ribs are my go to BBQ recipe. They are big juicy and host a lot of textures and flavor. With a big sized belly cut rib like this you are bound to steal the show at any backyard BBQ.

Ingredients
- Sweet & Sour Mustard SauceÂ
- 2000 grams belly ribs
- PitmasterX's Classic BBQ Rub
- 4 tbsp mustard
Instructions
- Get yourself a big cut of a whole belly rib section of a pig. You can asked your butcher for this. If you can't get a hold of this then get yourself some delicious good looking belly ribs and skip the next step.
- Take your carving knife and cut of all the excess fat from the rib side. Flip it over and take of the pork skin. Remove all the fat underneath the skin aswell so you expose all that beautifull meat. That's why you need a well balanced carving knife like this.
- Create a batch of PitmasterX's Classic BBQ RubPitmasterX's Classic BBQ Rub
- Take 4 around 4 tbsp of mustard and cover your ribs in it. this is functionsas a binder and adds flavor and bark at the same time.
- Cover your ribs in enough rub so you can't see the mustard anymore.
- Start up your Burnhard pelletsmoker and fill it up with pellets halfway.
- Set it to a temperature of a 120 dedrgees celcius and place your ribs in the middle of the smoker.
- Create a batch of Sweet & Sour Mustard SauceÂSweet & Sour Mustard SauceÂ
- After around 5 hours your ribs are done. I have to note that the thinner part was a little bit overcooked but that's the sacrifice i had to make to cook the thick part enough as well.
- Let it rest and serve with your Sweet & Sour BBQ sauce
