  • Remove the membrane off the back with a dinner knife.
  • Create the PitmasterX classic BBQ rub and add the zest and thyme.
  • Sprinkle the rub over the ribs. (all sides)
  • Fire up your BBQ and set the temperature to 110°C/230°F and add some smoke wood, we used cherry wood.
  • After 3 hour check how the ribs are doing, and start making the BBQ sauce.
  • Grab a pan, add the ingredients for the sauce and stir it well and let it come to a boil.
  • Wrap the ribs in aluminium foil, add some butter and your sauce and place them bach in to your BBQ.
  • After an hour it should be done, if you really want to know, measure the temperature of the ribs, use a thermometer and let it cook until it hits a core temperature of 94°C/201°F.
  • When they are done, brush them with a little bit of BBQ sauce while they are resting. After 5 minutes you are done!
