Classic Rotisserie BBQ Ribs

My tought on Classic BBQ Ribs; A good quality rack of ribs with only salt and pepper as a base. But do you know how to get the most out of these ribs? The answer is lots of smoke and lots of equally cooking. And the way to do it is my new flat Napoleon Rotisserie that is perfect for BBQ Ribs.
Classic Rotisserie BBQ Ribs are simple but pure. Along with a must have gadget for the BBQ purist these ribs are absolute winners.

  • This recipe starts with 2 beautifull rack of ribs and only a tbsp of salt and pepper.
  • Pad the ribs dry with a paper towel and equally season them on both sides with the membrane still one. The reason why is because we are going for a purist style cook and the membrane adds texture.
  • Grab your rotisserie and place both racks in the rotisserie.
  • Fire up the Napoleon with only the 2 center burners on right below the rotisserie and set them to a low temperature.

Adding smoke

  • Now you might think wow; this is a gas grill how can you add smoke? Well i'm using the smokerbox and some apple wood chips.
  • Take out the left flavourizer bar and set the ⅓ filled smoker tray where the flavourizer normally goes.
  • I'm not soaking these woodchips. I'm giving them a little bit of fire from the left burner for a while with the lit closed and once it catches fire i'm going to turn it off and let the ribs rotate in the smoke with the lit closed.
  • Make the Kimchi BBQ Sauce while the ribs are cooking. ( note for the people that are using the sideburner for this, take of the plastic handle from the rotisserie first!)

Rest of the cook

  • Halfway trough the cook i can see that one part catches more heat because of the smoker box. I'm going to carefully take out the rotisserie and flip it over so the other side can catch that same heat source as well.
  • After around 2,5 to 3,5 hours your ribs should be done because the rotisserie and this type of cook makes it a faster cook than your usual smoked ribs recipe.
