Ingredients
- 250 grams mushrooms chopped
- 2 red bell peppers
- 2 tbsp parsley chopped
- 2 geen peppers chopped
- 1 white onion sliced
- 500 grams shredded cheese
- 2 medium tortilla's
- 1 tbsp Fleur de Sel seasalt
- 1 tbsp ground black pepper
Instructions
- Fire up your Napoleon Phantom side burner.
- Heat up your cast iron pan.
- Pour some olive oil in the pan and let it come up to temperature as well.
- Fry your garlic.
- Quickly add your white onion and stir.
- after a minute add your mushrooms.
- Let the mushrooms souk up all those flavors and add a tbsp of olive oil.
- Add the bell peppers and green peppers and stir fry.
- add 1 tbsp of seasalt and 1 tbsp of black pepper and it's done.
Cheese Burrito
- Heat up a cast iron plancha on the grill. ( don't use the sideburner for that )
- Heat up 2 tortilla's on the grill grate for a couple of seconds.
- Roll your veggies inside the burrito and close on both sides.
- Make sure your plancha is non stick by cleaning it with a paper towel drenched in olive oil.
- Make a nice big surface of shredded cheese on your searing hot plancha and let it fry in its own fat.
- Set your burrito 1/3 length of the cheese plateau and take your spatula in hand.
- Gently feel with your spatula if the cheese is ''flippable''
- Restrain your burrito from sliding with one hand ( or use a another spatula if your not a nutjob like me ) and use the spatula to roll the cheese over the burrito.
- Stick your spatula underneath and roll another time and repeat after it's rolled up in cheese.
- Take it off the grill and let it rest.
